From my travels to Central America's tropical forests to the contemporary kitchens of world renown Chefs, I get my inspiration from the know-how of two major chocolate cultures.
I combine the down to earth and timeless tradition of the ancient Mayas and Aztecs, with the refined indulgence and technical skills of Belgian and French chocolatiers.
My chocolates and confections are hand-made with ingredients carefully selected from the finest producers. Whenever possible I favor local ingredients and I don't use preservatives or artificial additions.

My chocolate is made from heirloom cacao, Arriba, Fino de Aroma and Criollo, certified by the Fine Chocolate Industry Association. Only 3% of the world cacao production meets those standards.
